[whale] docs: x86_64 images build on methanol, not the local linux-builder master

whale/readme.md and flake-profiles/CLAUDE.md still described the old setup where sodium's linux-builder emulated x86_64 via binfmt. x86_64 builds now offload to the methanol remote builder (nix.buildMachines), and the linux-builder and its reset app have been removed. Rewrite the how-it-works, prerequisite, and troubleshooting sections accordingly and drop the stale reset-linux-builder references.
