feat(pds)!: write the log's field names in camelCase master

rename_all_fields on Entry, so the nine snake_case keys the log was the only file in the deployment writing go out as camelCase. A new test walks one sample of every variant and asserts every key at every depth, so a struct added to a payload without rename_all fails rather than lands.
