docs(plan): tick the DPoP items oauth and adversarial now close master

Both epics said what used to be true: dpop_seam as an unwired seam, and two adversarial DPoP-binding cases as open. Both are now wired end to end and pinned by tests; move the closed items to each epic's Done list.
