ci: migrate to spindle microvm engine, bump Node 20 -> 24 master

nixpkgs-unstable removed nodejs_20 after upstream EOL, which broke the nixery dependency eval. Switch to the new microvm engine while we're at it and pin the nixpkgs registry to keep resolution on unstable. Co-Authored-By: Claude Fable 5 <noreply@anthropic.com>
