ci: microvm engine checkouts live in /workspace/repo, not /tangled/workspace master

The first tag run failed on mkdir /tangled/workspace (the nixery staging path) — the microvm engine mounts the checkout at /workspace/repo and persists it across steps. Move all build state into .release/ inside the checkout; drop the separate install for the pkg binary (step order already leaves an amd64 build in build/bin/).
