fix(docs): override sharp version to fix node-gyp on arm master

An old version of libvips was failing(?) to downloading causing sharp to use node-gyp rebuild which errors due to missing python on the base image This shouldn't happen since we can def use a prebuild binary so update sharp which updates libvips version used.
