Fix CI: use bash globs instead of find/tr for PKG_CONFIG_PATH master

Nixery image doesn't include findutils or coreutils, so find and tr silently fail. Use bash glob expansion to scan /nix/store for pkgconfig directories. Added diagnostic echo of PKG_CONFIG_PATH in clippy step.
