Subject: [PATCH] feat: add cookieless PostHog analytics to the frontpage

Load the PostHog snippet from the production Layout head, pointed at the
EU-hosted project. persistence: "memory" keeps it cookieless, so no
consent banner is needed; dev servers never load it.
